A refreshing and healthy salad packed with lentils, vegetables, and feta cheese, perfect for a light meal or side dish.

Ingredients

  • 1 cup cooked green lentils
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, chopped
  • 1/4 cup sliced red onion
  • 1/4 cup Kalamata olives, halved
  • 1/2 cup feta cheese, crumbled
  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt & pepper to taste

Instructions

  1. In a large bowl, combine the cooked lentils, cherry tomatoes, cucumber, red onion, Kalamata olives, and crumbled feta cheese.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.
  3. Drizzle the dressing over the salad and toss gently to mix everything well.
  4. Serve the salad right away or let it chill in the refrigerator for about 30 minutes to enhance the blend of flavors.

Notes

Use fresh ingredients for the best flavor and texture. This salad can be made ahead of time, adding the feta just before serving.
