A hearty and customizable taco soup made easily in the Instant Pot, perfect for any occasion.

Ingredients

  • 1 lb ground beef or turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 cups chicken broth
  • 1 packet taco seasoning
  • Salt and pepper to taste
  • Toppings: shredded cheese, sour cream, avocado, cilantro

Instructions

  1. Turn the Instant Pot to sauté mode. Add ground meat and cook until browned. Drain excess fat.
  2. Add onion, garlic, and bell pepper, and sauté until softened.
  3. Stir in black beans, corn, diced tomatoes, chicken broth, and taco seasoning.
  4. Close the lid and set to high pressure for 10 minutes.
  5. Once cooking is complete, quick release the pressure.
  6. Stir the soup, taste, and adjust seasoning with salt and pepper.
  7. Serve hot with your choice of toppings.

Notes

For a creamier soup, add some cream cheese or sour cream just before serving. Let the soup sit after cooking for flavors to meld.
