A cozy and nourishing soup made with white beans, leafy greens, and fragrant herbs, perfect for chilly autumn nights.

Ingredients

  • 2 cans white beans (like cannellini or great northern), drained and rinsed
  • 4 cups vegetable broth
  • 2 cups chopped kale or spinach
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Juice of 1 lemon

Instructions

  1. In a large pot, warm olive oil over medium heat. Add the diced onion and garlic, cooking until translucent.
  2. Sprinkle in thyme and stir for another minute until fragrant.
  3. Add the white beans and broth. Bring to a gentle simmer and let cook for 10 minutes.
  4. Stir in your greens and cook just until wilted (about 2–3 minutes).
  5. Season with salt, pepper, and lemon juice. Serve hot.

Notes

This soup can be stored in the refrigerator for up to 3 days or frozen for up to 3 months. Reheat gently with a splash of broth or water.
