Ingredients

  • 1 head of cabbage, chopped
  • 1 onion, diced
  • 2 carrots, diced
  • 2 stalks of celery, diced
  • 1 bell pepper, chopped
  • 4 cups of low-sodium vegetable or chicken broth
  • 1 can of diced tomatoes
  • 2 cloves of garlic, minced
  • Salt and pepper to taste
  • Optional: herbs like thyme or bay leaves

Instructions

  1. In a large pot, heat a bit of olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté until they soften, about 5 minutes.
  2. Stir in the garlic and cook for another minute until fragrant.
  3. Add the chopped cabbage, bell pepper, diced tomatoes, and broth. Bring the mixture to a boil.
  4. Reduce the heat and let it simmer for about 30 minutes, or until the cabbage is tender.
  5. Season with salt, pepper, and any herbs you like. Stir well and enjoy!

Notes

For a heartier flavor, replace vegetable broth with low-sodium chicken broth. Add other vegetables like zucchini or spinach for variety.
