Ingredients

  • 1 cup green or brown lentils
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups vegetable broth
  • 2 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper, to taste
  • Tortilla chips, for topping
  • Fresh cilantro, for garnish
  • Avocado, for serving (optional)

Instructions

  1. In a large pot, heat a splash of water or vegetable broth over medium heat. Add the chopped onion and bell pepper; sauté until soft, about 5 minutes.
  2. Stir in the minced garlic, cumin, and chili powder. Cook for an additional 1-2 minutes.
  3. Add the lentils, diced tomatoes, and vegetable broth. Bring the mixture to a boil.
  4. Reduce the heat, cover the pot, and let it simmer for 30-40 minutes, or until the lentils are tender.
  5. Season with salt and pepper to taste.
  6. Serve hot, topped with tortilla chips, fresh cilantro, and avocado, if desired.

Notes

To keep the soup thick and creamy, stir occasionally and add water if needed while cooking. Use an immersion blender for a smoother texture if you prefer.
