A warm and comforting vegan soup made with garlic, chickpeas, and vegetable broth, perfect for chilly days.

Ingredients

  • 2 cups vegetable broth
  • 1 can chickpeas, drained and rinsed
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onions and sauté until they are soft and translucent.
  3. Stir in the minced garlic and cumin, cooking for another 1-2 minutes until fragrant.
  4. Add the chickpeas and vegetable broth, bringing it all to a simmer.
  5. Season with salt and pepper to taste. Let it cook for 15-20 minutes.
  6. For a creamier texture, blend part of the soup and return it to the pot. You can also use an immersion blender for this step.
  7. Serve hot and garnish with fresh parsley if desired!

Notes

This soup can be stored in the fridge for up to 4 days or frozen in individual portions. Adjust seasoning to taste and feel free to add other vegetables.
