A delicious and nutritious dish featuring sweet potatoes filled with a smoky BBQ chickpea mixture, perfect for lunch, dinner, or meal prep.

  • 2 large sweet potatoes
  • 1 can of chickpeas, drained and rinsed
  • 1/2 cup BBQ sauce (your choice)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnishing (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and poke holes in the sweet potatoes using a fork.
  3. Place the sweet potatoes on a baking sheet and bake for about 25-30 minutes or until tender.
  4. Heat olive oil in a pan over medium heat. Add the chickpeas, salt, and pepper, cooking for about 5 minutes.
  5. Pour the BBQ sauce over the chickpeas, stirring to combine. Cook for another 2-3 minutes until heated through.
  6. Once the sweet potatoes are done, take them out of the oven and let them cool slightly. Slice them down the middle.
  7. Stuff the sweet potatoes with the BBQ chickpea mixture and garnish with fresh parsley, if desired.

Notes

For crispy chickpeas, ensure they are well-drained. Store leftovers in an airtight container for up to 4 days.
