Warm, soft pretzel bites filled with gooey mozzarella cheese, perfect for any occasion.

Ingredients

  • 1 cup warm water
  • 1 packet active dry yeast
  • 1 tablespoon sugar
  • 2 ½ cups all-purpose flour
  • 1 teaspoon salt
  • ½ cup baking soda
  • Mozzarella cheese (cut into small cubes)
  • Coarse sea salt (for topping)
  • Melted butter (for brushing)

Instructions

  1. In a mixing bowl, combine warm water, yeast, and sugar. Let it sit for about 5 minutes until frothy.
  2. Add flour and salt to the yeast mixture, then mix until a dough forms.
  3. Knead the dough on a lightly floured surface for about 5 minutes until smooth.
  4. Divide the dough into small pieces and flatten each piece to insert a cube of mozzarella.
  5. Roll the dough around the cheese, sealing it tightly.
  6. In a pot, bring 4 cups of water to a boil and add baking soda. Drop pretzel bites in batches, cooking for about 30 seconds.
  7. Remove, drain, and place on a baking sheet lined with parchment paper. Brush with melted butter and sprinkle with coarse sea salt.
  8. Bake at 400°F (200°C) for about 10-12 minutes or until golden brown.

Notes

Ensure the water is warm, not hot, to protect the yeast. Store leftovers in an airtight container for up to 2 days or freeze for a month.
