A delightful one-bowl meal that combines fluffy rice, seasoned meat, fresh toppings, and zesty sauces, offering the classic flavors of tacos in a quick and customizable format.

  • 1 cup rice (white or brown)
  • 1 pound ground beef (or turkey)
  • 1 tablespoon taco seasoning
  • 1 can black beans, rinsed and drained
  • 1 cup corn (frozen or fresh)
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Optional toppings: avocado, sour cream, lettuce, salsa, cilantro

Instructions

  1. Cook the rice according to package instructions. Set aside once done.
  2. Brown the ground beef in a large skillet over medium heat until fully cooked.
  3. Drain excess fat from the beef and stir in taco seasoning, blending well.
  4. Add the black beans, corn, and diced tomatoes to the skillet, mixing to combine.
  5. Heat the mixture for about 5 minutes until everything is warmed through.
  6. Serve the beef mixture over a bed of rice and sprinkle shredded cheese on top. Optionally, place the bowl under the broiler for a couple of minutes to melt the cheese.
  7. Add your choice of toppings like avocado, sour cream, or salsa before serving.

Notes

Use a non-stick skillet for easy cooking and cleanup. Store leftovers in an airtight container in the fridge for up to 3 days.
