Sweet potato scones are a delightful twist on a classic baked good, perfect for breakfast or as a snack.

Ingredients

  • 1 cup mashed sweet potatoes
  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 cup cold butter, cubed
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the flour, sugar, baking powder, salt, and cinnamon.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the mashed sweet potatoes and milk until just combined.
  5. Turn the dough onto a floured surface and gently knead it a few times, then pat it into a circle about 1 inch thick.
  6. Cut into wedges or use a cookie cutter to create fun shapes.
  7. Place on a baking sheet and bake for 15-20 minutes, or until golden brown.

Notes

For a dairy-free version, substitute regular milk with almond milk or oat milk.
