  • 4 medium sweet potatoes
  • 1 pound ground turkey
  • 1 small onion, diced
  • 1 bell pepper, chopped (any color)
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Olive oil
  • Optional toppings: Greek yogurt, shredded cheese, green onions

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes and prick them with a fork. Place them on a baking sheet and bake for about 45-50 minutes, until tender.
  3. While the potatoes bake, heat olive oil in a skillet over medium heat. Add onions and bell peppers, cooking until soft.
  4. Stir in the garlic and ground turkey. Season with cumin, salt, and pepper. Cook until the turkey is browned and cooked through, about 5-7 minutes.
  5. Once the sweet potatoes are cooked, remove them from the oven. Carefully cut them open and fluff the insides with a fork.
  6. Fill each sweet potato with the turkey mixture, adding any optional toppings you desire. Serve warm and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, microwave for 1-2 minutes or heat in the oven at 350°F (175°C) for about 10-15 minutes.
