Ingredients

  • 4 cups fresh spinach
  • 1 cup sliced strawberries
  • ½ cup sliced almonds or walnuts
  • ¼ cup feta cheese (optional)
  • Salt and pepper to taste
  • ¼ cup balsamic vinegar
  • ½ cup olive oil
  • 1 tablespoon honey or maple syrup

Instructions

  1. Start by washing and drying the fresh spinach leaves, then place them in a large salad bowl.
  2. Slice the strawberries and add them to the bowl with the spinach.
  3. If using, crumble the feta cheese over the top of the salad.
  4. In a separate bowl, whisk together balsamic vinegar, olive oil, honey (or maple syrup), salt, and pepper until well combined.
  5. Drizzle the dressing over the salad and toss gently to combine all ingredients evenly.
  6. Serve the salad immediately, or chill for a few minutes for a refreshing coolness.
  7. For a beautiful presentation, top the salad with extra sliced strawberries and a sprinkle of nuts before serving.

Notes

Make sure the spinach is dry to prevent the dressing from becoming diluted. Store leftovers in an airtight container in the refrigerator.
