Delightful cookies that combine the flavors of strawberry and cheesecake in a portable treat perfect for any occasion.

  • 1 cup unsalted butter, softened
  • 1 cup cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup fresh strawberries, chopped
  • 1/2 cup white chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Beat together the softened butter, cream cheese, and sugar until smooth and creamy.
  3. Add the vanilla extract and mix well.
  4. Whisk together the flour and baking powder in another bowl. Gradually mix this into the cream cheese mixture until fully combined.
  5. Fold in the chopped strawberries and white chocolate chips (if using).
  6. Scoop tablespoons of dough onto a lined baking sheet, leaving space between each cookie. Bake for 12-15 minutes or until the edges are lightly golden.
  7. Allow the cookies to cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For a lighter version, you can substitute Greek yogurt for cream cheese, and frozen strawberries can be used if fresh are unavailable.
