  • 1 ripe avocado
  • 2 large eggs
  • Salt and pepper to taste

Instructions

  1. Begin by boiling water in a pot. Once it reaches a gentle simmer, gently lower the eggs in.
  2. Cook the eggs for about 6-7 minutes for soft-boiled perfection. Then, transfer them to an ice bath to stop the cooking process.
  3. While the eggs are cooling, toast your slices of bread until they are golden brown.
  4. Cut the ripe avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork and add a pinch of salt and pepper.
  5. Spread the mashed avocado generously on the toasted bread.
  6. Peel the soft-boiled eggs and cut them in half. Place them on top of the avocado toast.
  7. Finish with any optional toppings you like and serve immediately!
