A hearty and flavorful cowboy casserole made effortlessly in a slow cooker, perfect for busy weeknights.

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 can (4 oz) diced green chilies
  • 1 cup BBQ sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 tsp chili powder
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a skillet over medium heat, cook the ground beef until browned.
  2. Add chopped onions and cook until softened.
  3. In a slow cooker, layer the cooked ground beef and onions, corn, kidney beans, diced tomatoes, diced green chilies, BBQ sauce, cheddar cheese, mozzarella cheese, chili powder, salt, and pepper.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the flavors meld together.
  5. Garnish with fresh parsley and serve warm.

Notes

You can substitute ground turkey or chicken for a leaner option. Feel free to add your favorite veggies like bell peppers or zucchini for extra nutrition.
