Cozy Sloppy Joe Sliders packed with sweet and tangy beef, perfect for weeknight dinners or game-day fun.

  • 1 pound ground beef (80/20) or ground turkey
  • 1 onion, finely chopped
  • 1 green bell pepper, finely chopped (optional)
  • 2 cloves garlic, minced
  • 1 cup ketchup or tomato sauce
  • 2 tablespoons tomato paste
  • 2 tablespoons brown sugar
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon yellow mustard
  • 1 tablespoon apple cider vinegar (optional)
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 12 slider buns, split
  • 2 tablespoons butter (for brushing/toasting)
  • Cheddar or American cheese, sliced or shredded (optional)
  • Pickle chips, for serving

Instructions

  1. Heat a large skillet over medium-high. Add ground beef and cook, breaking it up, until browned. Drain excess fat if needed.
  2. Add chopped onion, bell pepper (if using), and garlic. Cook for 3–4 minutes until soft and fragrant.
  3. Stir in ketchup (or tomato sauce), tomato paste, brown sugar, Worcestershire, yellow mustard, chili powder, and a splash of vinegar. Season with salt and pepper.
  4. Reduce heat to medium-low and simmer for 6–10 minutes, stirring occasionally, until the sauce is thick and glossy. Adjust seasoning to taste.
  5. Meanwhile, heat oven to 350°F (175°C). Split slider buns and place bottoms on a lined sheet pan. Lightly brush with melted butter and toast for 3–5 minutes.
  6. Spoon the thick Sloppy Joe mixture onto the toasted bottoms. Add cheese if desired. Top with the bun lids and brush tops with a little butter. Bake at 350°F (175°C) for 5–8 minutes, until warm and cheese melts.
  7. Remove from oven and add pickle chips if desired. Serve hot with chips, slaw, or a simple salad.

Notes

For gluten-free options, use gluten-free buns and Worcestershire sauce. Can be made ahead of time.
