  • 1 pound ground beef or lamb
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery sticks, diced
  • 3 cloves garlic, minced
  • 4 cups beef or vegetable broth
  • 2 cups diced potatoes
  • 1 cup frozen peas
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • Fresh herbs (like thyme or parsley) for garnish

Instructions

  1. In a large pot or Dutch oven, brown the ground meat over medium heat until fully cooked. Drain any excess fat.
  2. Add chopped onions, carrots, and celery to the pot. Sauté until the vegetables soften, about 5-7 minutes.
  3. Stir in minced garlic and cook for an additional minute.
  4. Add the beef broth, diced potatoes, tomato paste, Worcestershire sauce, and season with salt and pepper. Bring to a boil.
  5. Reduce heat and let it simmer for 15 minutes, or until potatoes are tender.
  6. Stir in frozen peas and cook for another 5 minutes.
  7. Serve hot, garnished with fresh herbs!

Notes

For a thicker soup, mash some potatoes while cooking. Leftovers can be stored in the refrigerator for up to three days or frozen for longer storage.
