  • 2 bell peppers (any color), sliced
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • Lemon wedges, for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a large sheet pan, arrange the sliced bell peppers and red onion in an even layer.
  3. Drizzle with olive oil, and season with salt, pepper, and garlic powder. Toss to coat.
  4. Place the salmon fillets on top of the vegetables.
