A creamy, rich soup featuring fresh crab meat and a hint of sherry, perfect for a comforting meal or special occasion.

Ingredients

  • Fresh crab meat
  • 1 Onion, chopped
  • 2 Stalks of celery, chopped
  • 2 Carrots, chopped
  • 2 Cloves of garlic, minced
  • 2 cups Heavy cream
  • 1/2 cup Sherry
  • 4 cups Fish or chicken stock
  • 2 tbsp Butter
  • 1 tbsp Old Bay seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onions, celery, and carrots, cooking until soft.
  3. Stir in the minced garlic and cook for another minute.
  4. Add the crab meat and cook gently to heat through.
  5. Pour in the heavy cream and stock, then add sherry and seasoning.
  6. Simmer the soup for about 10-15 minutes and enjoy!

Notes

Using real crab meat enhances flavor, but canned crab can be used in a pinch. Store leftovers in an airtight container for 3-4 days.
