Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground turkey (93% lean)
  • 1 small yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1/2 teaspoon smoked paprika (optional)
  • 1/2 teaspoon kosher salt, plus more to taste
  • 1/4 teaspoon black pepper
  • 1/2 cup sun-dried tomatoes in oil, drained and sliced
  • 1 tablespoon tomato paste
  • 1/2 cup low-sodium chicken broth
  • 3/4 cup heavy cream (or half-and-half)
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon Dijon mustard (optional, for depth)
  • 1–2 teaspoons fresh lemon juice (optional, to brighten)
  • 2 tablespoons fresh basil or parsley, chopped
  • Cooked pasta, rice, or veggie noodles, for serving

Instructions

  1. Warm the olive oil in a large skillet over medium heat. Add the ground turkey and break it up with a spoon.
  2. Cook the turkey until no pink remains and it reaches 165°F, about 6–8 minutes. Season with salt and black pepper.
  3. Add the onion and cook until soft, 3–4 minutes. Stir in the garlic, Italian seasoning, red pepper flakes, and smoked paprika; cook 30 seconds.
  4. Stir in the tomato paste and cook 1 minute to caramelize. Add the sun-dried tomatoes and toss to coat.
  5. Pour in the chicken broth and scrape up any browned bits. Simmer 2 minutes to reduce slightly.
  6. Reduce heat to medium-low. Stir in the cream and simmer 3–5 minutes, stirring, until the sauce thickens. Mix in Parmesan and Dijon; simmer 1–2 minutes more. Adjust salt and heat as needed.
  7. Turn off heat. Add lemon juice (if using) and fresh basil or parsley. Spoon over pasta, rice, or veggies and serve hot.

Notes

For a lighter version, use half-and-half and add 2 ounces low-fat cream cheese. For a dairy-free option, substitute with coconut milk and nutritional yeast. This dish reheats well and is great for meal prep.
