Savory Baked Brie with Garlic and Fresh Herbs

An easy, impressive appetizer that melts into a gooey, herb-scented center, perfect for gatherings or cozy nights.

Ingredients

  • 1 round (8–12 oz) brie cheese
  • 23 cloves garlic, minced
  • 2 tablespoons extra-virgin olive oil or softened butter
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh parsley
  • Salt and freshly ground black pepper, to taste
  • Crackers, sliced baguette, or raw vegetables for serving

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Trim any excess paper from the brie. Score a shallow crosshatch on the top rind.
  3. In a small bowl, combine minced garlic, olive oil (or butter), chopped herbs, salt, and pepper.
  4. Spread the herb mixture over the top of the brie, pressing lightly so it adheres.
  5. Place the brie on a small baking sheet, in a shallow oven-safe dish, or on parchment.
  6. Bake for 12–15 minutes, until the center is soft and the top is lightly golden.
  7. Remove from oven and let rest for 2–3 minutes before serving with bread or crackers.

Notes

Use a shallow baking dish to catch melted cheese. Check at 10 minutes if your brie is smaller or your oven runs hot.
