A soul-soothing soup made with white beans, fresh vegetables, and fragrant herbs that embodies the essence of Tuscan cooking.

Ingredients

  • 2 cups white beans (canned or soaked and cooked)
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 can diced tomatoes
  • 2 teaspoons dried oregano
  • 2 teaspoons fresh thyme
  • Salt and pepper to taste
  • Fresh basil and parsley for garnish
  • Olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion, carrots, and celery, and sauté until softened, about 5-7 minutes.
  2. Stir in the garlic and cook for another minute.
  3. Add the beans, vegetable broth, diced tomatoes, oregano, thyme, salt, and pepper.
  4. Bring the soup to a simmer, cover, and let it cook for about 30 minutes.
  5. Adjust seasoning if needed.
  6. Serve hot, garnished with fresh basil and parsley.

Notes
