A simple and flavorful side dish featuring roasted broccoli, garlic, and Parmesan cheese that is easy to prepare and fits any meal.

  • pounds broccoli, cut into bite-size florets
  • 2 to 3 tablespoons olive oil
  • 2 to 3 cloves garlic, finely minced
  • ⅓ cup Parmesan cheese, finely grated
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • Pinch of red pepper flakes (optional)
  • 1 small lemon, for zest and juice (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Line a large rimmed baking sheet with parchment paper.
  3. Cut broccoli into even florets; peel thick stems and slice into ½-inch pieces.
  4. Dry the broccoli well with a clean towel.
  5. Toss broccoli with olive oil, salt, and black pepper until well coated.
  6. Spread broccoli on the baking sheet in a single layer.
  7. Roast for 15 minutes.
  8. Add garlic and Parmesan; toss gently and spread out again.
  9. Return to the oven and roast for 5 to 8 minutes more.
  10. Finish with lemon zest and juice; adjust salt and pepper to taste.

Notes

Avoid overcrowding the baking sheet for best results. For extra char, preheat your baking sheet before adding broccoli.
