Warm and comforting, red lentil soup is a delightful dish that nourishes both body and soul, perfect for chilly evenings or as a hearty lunch option.

Ingredients

  • 1 cup red lentils
  • 1 onion, diced
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth or water
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Optional: spinach or kale for added greens

Instructions

  1. In a large pot, sauté the onions and carrots in a bit of oil over medium heat until softened.
  2. Add the garlic and cumin to the pot and cook for an additional minute until fragrant.
  3. Stir in the red lentils and broth (or water) and bring to a boil.
  4. Reduce heat and simmer for about 20 minutes, or until lentils are tender.
  5. Season with salt and pepper to taste, and if desired, stir in spinach or kale until wilted.

Notes

For a smoother texture, puree part of the soup with an immersion blender. Store in an airtight container for up to 4 days.
