A hearty, comforting Tex-Mex soup that warms you up with savory flavors and a spicy kick from ranch seasoning.

Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet ranch dressing mix
  • 4 cups beef broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, avocado, tortilla chips

Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add beans, corn, diced tomatoes, beef broth, ranch dressing mix, chili powder, and cumin to the pot. Stir well to combine.
  3. Bring the mixture to a boil, then reduce heat and let it simmer for about 20 minutes.
  4. Season with salt and pepper to taste.
  5. Serve hot, topped with your choice of shredded cheese, sour cream, avocado, and tortilla chips.

Notes

For extra texture, mash a portion of the beans after adding them to the pot. You can also use plant-based alternatives for a vegetarian option.
