A warm and hearty soup packed with protein-rich lentils, fresh vegetables, and bold Mediterranean flavors, ready in just 30 minutes.

Ingredients

  • 1 cup dried lentils (green or brown)
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth or water
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat olive oil over medium heat.
  3. Add the chopped onion and garlic. Sauté for about 2-3 minutes until fragrant.
  4. Stir in the carrots and celery, cooking until they begin to soften.
  5. Add the rinsed lentils, diced tomatoes, broth, and spices. Bring to a boil.
  6. Reduce heat and let it simmer for about 20-25 minutes, until lentils are tender.
  7. Season with salt and pepper to taste. Garnish with fresh parsley before serving.

Notes

For a lower-carb and gluten-free version, modify the recipe by adding more leafy greens instead of lentils.
