A rich and comforting pumpkin soup that embraces the flavors of fall, packed with nutrients and easy to make.

  • 1 medium pumpkin, peeled and diced
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk (or heavy cream)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground nutmeg
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and cook for an additional minute, stirring frequently to avoid burning.
  3. Stir in the diced pumpkin, cumin, nutmeg, salt, and pepper. Cook for about 5 minutes, allowing the flavors to meld.
  4. Pour in the vegetable broth, bringing the mixture to a boil. Once boiling, reduce the heat and simmer for 20-25 minutes, or until the pumpkin is tender.
  5. Using an immersion blender, puree the soup until smooth. Alternatively, transfer the soup to a blender in batches.
  6. Stir in the coconut milk or heavy cream for a creamy finish. Adjust seasoning to taste.
  7. Serve hot, garnished with fresh parsley.

Notes

For best flavor, use sugar pumpkins. For a chunky texture, reserve some pumpkin pieces before blending. Freezes well in airtight containers.
