½ cup sugar
½ cup unsalted butter, melted
2 (8-ounce) packages cream cheese, softened
1 cup sugar
2 large eggs
1 cup pumpkin puree
1 teaspoon vanilla extract
1 teaspoon cinnamon
½ teaspoon nutmeg
¼ teaspoon salt
Instructions
Preheat your oven to 350°F (175°C).
In a bowl, mix together the graham cracker crumbs, sugar, and melted butter until combined. Press the mixture firmly into the bottom of a greased baking dish.
In another bowl, beat the softened cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each addition.
Stir in the pumpkin puree, vanilla, cinnamon, nutmeg, and salt until fully incorporated.
Pour the cheesecake filling over the crust and spread it evenly.
Bake for 30-35 minutes, or until the center is set. Let it cool before cutting into bars.
