A cozy, delicious bread that combines pumpkin spice and chocolate chips, perfect for fall.

  • 1 cup of canned pumpkin
  • 1 cup of sugar
  • 1/2 cup of vegetable oil
  • 2 eggs
  • 1 1/2 cups of all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 cup of chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the pumpkin, sugar, and vegetable oil until well combined.
  3. Add in the eggs one at a time, mixing well after each addition.
  4. In a separate bowl, sift together the flour, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in the chocolate chips gently.
  7. Pour the batter into a greased loaf pan and smooth the top.
  8. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
  9. Let it cool in the pan for about 10 minutes, then transfer to a wire rack.

Notes

Do not overmix the batter; it’s okay if there are small lumps. Check for doneness a few minutes before the time is up. Store the bread wrapped tightly for up to 4 days at room temperature or freeze for up to 3 months.
