Ingredients

Scale
  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, mash the ripe bananas with a fork, then stir in the melted butter.
  3. Mix in the sugar, beaten egg, and vanilla.
  4. Sprinkle the baking soda and salt over the banana mixture, then mix in the flour until just combined.
  5. Pour the batter into a greased loaf pan and smooth the top. Bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let it cool in the pan for a bit before transferring to a wire rack to cool completely.

Notes

Ensure your bananas are very ripe for best flavor. Store in an airtight container for up to 3 days, or refrigerate for longer storage.
