Delicious cookies that combine rich chocolate flavors with a refreshing hint of peppermint, perfect for holiday gatherings.

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1 large egg
  • 1 teaspoon peppermint extract
  • 1/2 cup chocolate chips
  • Crushed peppermint candies for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In another bowl, cream the softened butter and sugar until light and fluffy.
  4. Add the egg and peppermint extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  6. Stir in the chocolate chips.
  7. Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them apart.
  8. Bake for 10-12 minutes, or until the edges are set.
  9. Remove from the oven and sprinkle crushed peppermint candies on top while the cookies are still warm.

Notes

For a softer cookie, be careful not to overbake. Store in an airtight container up to a week.
