Juicy, tender, and full of flavor, this oven baked chicken breast is a quick and reliable go-to for busy nights.

Ingredients

  • 24 boneless skinless chicken breasts (about 68 oz each)
  • 12 tbsp olive oil
  • 1 tsp kosher salt (use 3/4 tsp if using fine salt)
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika (sweet or smoked)
  • 1/2 tsp onion powder
  • 1 tsp Italian seasoning (or dried oregano)
  • Optional quick brine: 4 cups cold water + 3 tbsp kosher salt

Instructions

  1. Preheat oven to 425°F (220°C). Line a sheet pan with parchment paper or foil for easy cleanup.
  2. Stir 3 tbsp kosher salt into 4 cups cold water and submerge chicken for 15–30 minutes.
  3. Pound the chicken to an even 3/4-inch thickness using a meat mallet.
  4. Mix salt, pepper, garlic powder, paprika, onion powder, and Italian seasoning in a bowl and rub chicken with oil and spices.
  5. Place chicken on the prepared pan, leaving space between pieces for even cooking.
  6. Bake at 425°F (220°C) for 16–20 minutes until internal temperature reaches 165°F (74°C).
  7. Rest for 5–10 minutes, then slice and serve.

Notes

Add lemon juice for an extra kick; store in airtight containers for 3–4 days in the fridge.
