This Oven Baked Chicken Breast is juicy, tender, and full of flavor. A quick, no-fuss dinner that’s perfect for meal prep and busy weeknights.

  • 2 large boneless, skinless chicken breasts (8–10 oz each)
  • 1 tablespoon olive oil (or avocado oil)
  • 1 teaspoon kosher salt (or 3/4 teaspoon fine salt)
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (sweet or smoked)
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon Italian seasoning (or dried oregano/thyme)
  • Optional finish: 1 tablespoon melted butter, lemon wedges, chopped parsley

Instructions

  1. Heat oven to 425°F (220°C). Line a sheet pan with foil or parchment for easy cleanup.
  2. If the chicken is thick on one end, pound it to an even 3/4-inch thickness. Pat dry with paper towels.
  3. In a small bowl, mix salt, pepper, garlic powder, paprika, onion powder, and Italian seasoning.
  4. Rub the chicken with olive oil. Sprinkle the spice mix on both sides and press to help it stick.
  5. Place the chicken on the pan. For extra flavor, add a few lemon slices around it (optional).
  6. Bake at 425°F (220°C) for 18–22 minutes, until the center reaches 165°F (74°C). Start checking at 16 minutes for smaller breasts.
  7. Rest for 5–10 minutes, tented loosely with foil. Brush with melted butter and a squeeze of lemon if desired.
