A delicious and convenient one-pan meal featuring juicy chicken, fresh vegetables, and vibrant Italian seasonings, perfect for a weeknight dinner.

Ingredients

  • Chicken breasts or thighs
  • Olive oil
  • Garlic
  • Bell peppers
  • Zucchini
  • Cherry tomatoes
  • Italian seasoning
  • Salt and pepper
  • Fresh basil (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken with salt, pepper, and Italian seasoning, then add to the skillet.
  3. Cook the chicken for about 5-7 minutes per side, or until it’s golden brown and cooked through.
  4. Remove the chicken from the skillet and set aside on a plate.
  5. In the same skillet, add minced garlic and chopped bell peppers and zucchini. Sauté for about 4-5 minutes.
  6. Add cherry tomatoes and the chicken back into the skillet. Cook for another 5 minutes until everything is heated through.
  7. Garnish with fresh basil before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in a skillet over low heat or in the microwave with a splash of water.
