  • 1 cup grated cheese (cheddar or mozzarella)
  • 1 cup chopped olives (green, black, or a mix)
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • ¾ cup milk
  • ½ cup olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the flour, baking powder, and salt together.
  3. Stir in the grated cheese and chopped olives until evenly distributed.
  4. In another bowl, combine the milk and olive oil, then add it to the dry ingredients.
  5. Mix until just combined; do not over-mix.
  6. Pour the mixture into a greased loaf pan.
  7. Bake for 30-35 minutes or until golden and a toothpick comes out clean.

Notes

Make sure not to over-mix your batter for a fluffy texture. Store at room temperature for up to 3 days.
