A warm and easy noodle soup that’s flexible, comforting, and perfect for any day, using common ingredients like noodles, broth, and vegetables.

Ingredients

  • 6 cups chicken or vegetable broth
  • 150 g (about 5 oz) noodles (egg noodles, ramen, or spaghetti broken)
  • 1 carrot, sliced
  • 1 stalk celery, chopped
  • 1 small onion, diced
  • 1 garlic clove, minced
  • 1 cup cooked shredded chicken (optional)
  • 1 tbsp oil or butter
  • Salt and pepper to taste
  • Fresh parsley or green onion for garnish

Instructions

  1. Heat oil or butter in a pot over medium heat. Add onion and cook until soft, 3–4 minutes.
  2. Add garlic, carrot, and celery. Cook 2–3 minutes until vegetables soften.
  3. Pour in the broth and bring to a boil.
  4. Add noodles and cook until tender, following package time.
  5. Stir in shredded chicken (if using) to heat through. Season with salt and pepper.
  6. Serve hot, topped with parsley or green onion.

Notes

Use a wide pot for even cooking. If storing leftovers, slightly undercook the noodles to prevent sogginess.
