  • 1.5 cups water

Instructions

  1. In a large bowl, combine the all-purpose flour, whole wheat flour, salt, and pumpkin spice (if using).
  2. In another bowl, mix the active sourdough starter, pumpkin puree, and water until well combined. Gradually add the wet mixture to the dry ingredients, stirring until a sticky dough forms.
  3. Cover the bowl with plastic wrap or a damp cloth and let it rise at room temperature for about 12-18 hours.
  4. Turn the dough out onto a floured surface, shape it gently into a round loaf, and let it rest for 30 minutes.
  5. Preheat your oven to 450°F (230°C) with a Dutch oven inside. Place the dough into the Dutch oven, cover it, and bake for 30 minutes.
  6. Remove the lid and bake for an additional 15-20 minutes until the bread is golden brown.

Ensure you have a reliable sourdough starter for the best results. A Dutch oven helps achieve a crispy crust. Store bread wrapped in a towel for up to three days or freeze for longer storage.
