  • 8 oz cream cheese, softened
  • 1/2 cup pumpkin puree
  • 1 cup graham cracker crumbs (plus extra for coating)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup white chocolate chips (optional, for coating)

Instructions

  1. In a large mixing bowl, combine the softened cream cheese, pumpkin puree, powdered sugar, vanilla extract, pumpkin pie spice, cinnamon, and nutmeg. Mix until smooth and creamy.
  2. Gradually add the graham cracker crumbs and mix until the dough comes together and is firm enough to roll into balls.
  3. Scoop out tablespoon-sized portions of the mixture and roll them into balls with your hands.
  4. If desired, melt the white chocolate chips in the microwave in 30-second intervals, stirring in between until smooth.
  5. Roll each ball in additional graham cracker crumbs for a crunchy coating, or dip them into the melted white chocolate for a sweet, candy-like coating.
  6. Place the finished pumpkin cheesecake balls on a baking sheet lined with parchment paper.
  7. Chill in the refrigerator for at least 1 hour to firm up before serving.
