Delightful cupcakes combining rich chocolate flavor with a refreshing hint of mint, perfect for any occasion.

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 tablespoon peppermint extract
  • 1 cup water

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking soda, and salt.
  3. Add the vegetable oil, vanilla extract, and peppermint extract to the dry ingredients.
  4. Slowly pour in the water and mix until everything is well combined.
  5. Fill each cupcake liner about 2/3 full with batter.
  6. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  7. Let them cool completely before frosting.

Notes

Store in an airtight container at room temperature for up to three days or in the fridge for longer. Reheat in the microwave for 10-15 seconds to maintain moisture.
