Delicious Mini Veggie Tartlets made with creamy ricotta and fresh vegetables, perfect for any gathering.

Ingredients

  • 1 sheet puff pastry
  • 1/2 cup ricotta cheese
  • 1 tbsp olive oil
  • 1 zucchini, thinly sliced
  • 1 tomato, thinly sliced
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the puff pastry into small rounds and place them in muffin tins.
  3. Spread a layer of ricotta cheese on the base of each tartlet.
  4. Layer the thin slices of zucchini and tomato in a spiral pattern on top of the ricotta.
  5. Brush the tops with olive oil and sprinkle salt and pepper to taste.
  6. Bake in the oven for 20–25 minutes, or until the pastry is golden brown.
  7. Serve warm or at room temperature.

Notes

For a crispier base, bake the puff pastry for a few minutes before adding the ricotta and vegetables. Customize with different cheeses and herbs for unique flavors.
