Mini sugar cookies are the perfect treat to brighten up any occasion with their soft, chewy texture and delightful vanilla flavor.

  • 1 cup granulated sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Roll the dough into small balls, about 1 inch in diameter.
  7. Place the dough balls on a baking sheet lined with parchment paper, making sure to space them apart.
  8. Bake for 8-10 minutes or until the edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

Notes

For best texture, don’t overmix the dough once you add the flour. Ensure uniform sizes for even baking.
