Warm and comforting Mediterranean-Style Cauliflower Soup made with fresh ingredients and spices, perfect for lunch or dinner.

  • 1 head of cauliflower, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon cumin
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and garlic, cooking until they are soft and fragrant.
  2. Toss in the chopped cauliflower, oregano, cumin, salt, and pepper. Stir for a couple of minutes to coat the cauliflower.
  3. Add the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 15 minutes, or until the cauliflower is tender.
  4. Use an immersion blender to puree the soup until it’s smooth (or carefully transfer in batches to a blender).
  5. Taste and adjust seasoning if needed. Serve warm with a drizzle of olive oil on top.

Notes

For added protein, consider throwing in some cooked chickpeas or lentils. Use coconut milk instead of broth for a creamier texture.
