A vibrant and healthy salad packed with nutritious ingredients, perfect for a light lunch or as a side dish.

Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, chopped
  • 1/4 red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Combine the rinsed chickpeas, cherry tomatoes, cucumber, bell pepper, red onion, and parsley in a large bowl.
  2. Whisk together the olive oil, lemon juice, salt, and pepper in a small bowl.
  3. Pour the dressing over the chickpea mixture.
  4. Gently toss everything together until the salad is well coated.
  5. Let the salad sit for 10-15 minutes to allow flavors to combine.
  6. Serve immediately or refrigerate for up to 1 hour.
  7. Add additional salt and pepper to taste, and enjoy your refreshing salad!

Notes
