Margarita Grilled Shrimp Skewers

Delightful shrimp skewers marinated in lime and cilantro, perfect for grilling and impressing guests.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • 2 tablespoons tequila (optional)
  • 2 tablespoons fresh cilantro, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Whisk together olive oil, lime juice, tequila, cilantro, garlic, salt, and black pepper in a large bowl.
  2. Add the shrimp to the marinade and toss to coat well. Let them marinate for at least 30 minutes.
  3. Preheat your grill to medium-high heat and soak wooden skewers in water for 15 minutes if using.
  4. Thread the marinated shrimp onto the skewers, placing them close together.
  5. Grill the skewers for 2-3 minutes on each side or until the shrimp turn pink and opaque.
  6. Remove the skewers from the grill and let them rest for a couple of minutes.
  7. Serve immediately, perhaps with a side of fresh salad or grilled veggies!

Notes

Avoid overcooking the shrimp to prevent them from becoming rubbery. Store leftovers in an airtight container for up to 2 days.
