A soft and moist cake infused with fresh lime, a touch of tequila, and topped with a sweet glaze, perfect for summer parties and celebrations.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 1/2 cup butter or neutral oil
  • 3 large eggs
  • Zest of 2 limes
  • 1/2 cup fresh lime juice
  • 1/2 cup milk or sour cream
  • 2 tablespoons tequila (optional)
  • 1 cup powdered sugar (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and grease and flour a cake pan.
  2. Whisk together flour, baking powder, and salt in a bowl.
  3. In another bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, mixing in lime zest and juice.
  4. Alternately add the dry mix and milk/sour cream to the butter mixture, mixing until smooth. Stir in tequila if desired.
  5. Pour the batter into the prepared pan and bake for 25-35 minutes, or until a toothpick inserted comes out clean.
  6. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack.
  7. For the glaze, mix powdered sugar with lime juice and a splash of tequila or milk. Pour over the cooled cake and let set. Garnish with lime slices.

Notes

Use fresh lime juice and zest for the best flavor. Store in an airtight container for up to 2 days at room temperature or 5 days in the fridge.
