Make Ahead Fruit and Yogurt Parfaits

Creamy and vibrant fruit and yogurt parfaits that are easy to make ahead for busy mornings or snacks.

Ingredients

  • 3 cups Greek yogurt (plain or vanilla; skyr also works)
  • 2–3 cups fruit (fresh or frozen; berries, mango, peaches, pineapple, apples, or grapes)
  • 1–2 tablespoons honey or maple syrup (to taste)
  • 1 teaspoon vanilla extract (optional)
  • 1 teaspoon lemon zest or 1 tablespoon lemon juice
  • 1–2 tablespoons chia seeds (optional)
  • 1½ cups granola (store separate to keep crisp)
  • 1/2 cup nuts or seeds (optional; almonds, walnuts, pepitas)
  • Pinch of salt (optional)

Instructions

  1. Gather 4 clean 12-ounce jars with lids. Wash and dry fruit. Cut grapes or strawberries into bite-size pieces.
  2. Stir yogurt with vanilla, honey, and a tiny pinch of salt. Mix in chia seeds if using and let sit for 5 minutes.
  3. For a quick fruit sauce (optional), simmer 2 cups of berries with 1 tablespoon honey and 1 teaspoon lemon juice for 5–7 minutes. Cool for 10 minutes.
  4. Layer each jar with 1/3 cup yogurt, 1/4 cup fruit (fresh or cooled compote), then more yogurt.
  5. Add nuts or seeds as a barrier on top of fruit to keep the crunch dry; keep granola separate to add just before eating.
  6. Chill sealed jars at 37–40°F (3–4°C) for at least 2 hours to set flavors. They keep well for 3–5 days.
  7. When ready to serve, open, top with granola and any fresh fruit, and enjoy cold.

Notes

Use thick yogurt for cleaner layers and no watery jars. Store granola separate for crunch.
