  • 6 cups chicken broth
  • 1 cup egg noodles
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 teaspoon black pepper
  • Salt to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery; sauté until softened, about 5 minutes.
  2. Add garlic and cook for another minute.
  3. Pour in chicken broth and bring to a boil.
  4. Stir in egg noodles and cook according to package instructions.
  5. Add shredded chicken, lemon juice, lemon zest, and black pepper to the pot.
  6. Season with salt to taste.
  7. Simmer for an additional 5-10 minutes, until heated through.
  8. Serve hot, garnished with fresh parsley if desired.
