A refreshing pasta salad filled with juicy corn, creamy dressing, and fresh herbs, perfect for summer gatherings.

Ingredients

  • 2 cups of cooked pasta (elbow or rotini)
  • 1 cup of fresh corn (cooked or canned)
  • 1/2 cup of diced red bell pepper
  • 1/4 cup of chopped red onion
  • 1/4 cup of fresh cilantro, chopped
  • 1/2 cup of mayonnaise
  • 1 tablespoon of lime juice
  • Salt and pepper to taste

Instructions

  1. Start by cooking the pasta according to package instructions. Drain and set aside to cool.
  2. While the pasta cools, prepare the corn by cooking it if using fresh, or drain it if using canned.
  3. In a large bowl, combine the cooked pasta, corn, diced bell pepper, red onion, and cilantro.
  4. In a separate bowl, mix the mayonnaise, lime juice, salt, and pepper to create the dressing.
  5. Pour the dressing over the pasta mixture and stir until everything is well coated.
  6. Chill the salad in the refrigerator for at least 15 minutes to let the flavors meld.
  7. Serve cold, and enjoy the burst of flavors!

Notes

This pasta salad can be made ahead of time for even better flavor. Store in an airtight container in the refrigerator for 3-4 days.
