Juicy Grilled Lemon Garlic Asparagus

Bright, juicy, and full of flavor, this grilled lemon garlic asparagus is a fast side that goes with almost any meal.

Ingredients

  • 1 to 1.5 pounds asparagus, ends trimmed
  • 2 tablespoons olive oil
  • 1 large lemon (zest and 2 tablespoons juice)
  • 2 to 3 garlic cloves, finely minced
  • 1/2 teaspoon kosher salt (or to taste)
  • 1/4 teaspoon black pepper
  • Optional: pinch red pepper flakes
  • Optional finish: 2 tablespoons grated Parmesan, fresh parsley, extra lemon wedges

Instructions

  1. Trim the woody ends of the asparagus (snap or cut about 1–2 inches). Zest the lemon, then juice it.
  2. Mix olive oil, lemon zest, lemon juice, minced garlic, salt, pepper, and red pepper flakes if using in a large bowl.
  3. Add asparagus to the bowl and toss to coat well. Let sit for 5–10 minutes while you heat the grill.
  4. Preheat grill to medium-high heat (about 400–450°F). Clean and oil the grates.
  5. Place asparagus crosswise on the grates, use a grill basket, or thread onto skewers to prevent falling through.
  6. Grill for 5–7 minutes, turning once or twice, until crisp-tender with light char. Thinner spears cook in 3–5 minutes; thicker spears may need a bit longer.
  7. Move to a platter. Squeeze a little extra lemon on top. Add Parmesan and parsley if you like. Serve hot.

Notes

Choose medium-thick spears for easy grilling and even cook. Store in an airtight container for 3–4 days.
