  • 1 cup Arborio rice
  • 4 cups vegetable broth (or chicken broth)
  • 1 cup sliced mushrooms (such as cremini or button)
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a pot, heat the vegetable broth over low heat. Keep it warm.
  2. In a separate large pan, heat the olive oil over medium heat. Add the chopped onion and garlic, cooking until soft.
  3. Add the sliced mushrooms to the pan and cook until tender.
  4. Stir in the Arborio rice, letting it toast for 2-3 minutes while stirring.
  5. Gradually add the warm broth, one ladle at a time, stirring continuously. Wait until the rice absorbs most of the broth before adding more.
  6. After about 15-20 minutes, when the rice is creamy and al dente, stir in the heavy cream and Parmesan cheese.
  7. Season with salt and pepper to taste, and serve hot.

Notes

Constant stirring helps to release starch for a creamier texture. Add broth slowly for best consistency.
